课 程 号:3104218 课程名称(Course name):食品包装学 Food Packaging 学时(hours ):36 学分(credits):2.0 先修课程(First courses):食品化学、食品微生物学、食品机械、食品工艺学及工程制图和计算机制图 课程简介 食品包装学是一门多种学科互相渗透的边缘学科,同时又是一门逐渐发展、完善并独立于工艺学的专门学科,是食品科学与工程、食品质量与安全方向的专业基础课程之一。食品包装学以各门基础课及专业课为背景,涵盖了食品化学、材料学、食品机械、微生物及食品工艺等知识点。主要讲授内容包括:包装的基本概念、食品包装材料概述、纸类包装材料及其包装制品、玻璃、陶瓷包装材料及其制品、塑料在食品包装中的应用、金属包装材料及其包装制品、食品包装基本技术方法及其设备、各类食品包装方法。通过本门课程学习使学生明确食品包装在食品加工中的地位和作用,系统掌握食品包装的基本程序和技术方法;使学生了解工艺学与包装学之间的紧密联系,掌握包装材料及包装技术的基础知识,并初步具备食品包装设计的能力。 Food packaging is a penetrative course of interdisciplinary subjects, but it is also a special course in progressive development ,improve and independent of the technology. It is one of the professional foundation courses for the direction of food science and engineering, food quality and safety. The background of Food packaging is all kinds of basic and specialized courses. It is covering food chemistry, materials science, food machinery, microbial and food technology and other knowledge points. Main topics include: basic concepts of packaging, overview of food packaging materials, paper packaging materials and products, glass, ceramic packaging materials and products, the applications of plastic in food packaging, metal packaging materials and products, basic technical and methods of food packaging and equipment, various methods of food packaging. Through this course students can make clear of the status and role of food packaging in food processing, master the basic procedures for food packaging and technical methods of food packaging overall, so that students can understand the close contact between technology and packaging science, master the basic knowledge of packaging material and packaging technologies, and have the preliminary ability of food packaging and design.
